Can this be done now ..... ? I know many folks asked for it back in the days of itunes..... ;-)

There is no such preference.
In the old days of iTunes, each new playlist would inherit the view options of your main library.
Then iTunes switched, and Music continues, to create each new playlist in that thing called "Playlist View," leaving you with the task of changing it to something useful.
