I'm considering upgrading from iPhone8 Plus to iPhone 12. my biggest concern is losing the fingerprint reader. I do not like the facial recognition to open my phone. Can I use pin to open the phone and facial recognition to open apps?

Yes you can. You will setup the Face ID and your passcode that you are accustomed to. You can then use either one of the methods to unlock your iPhone.
