The default color for highlighting is unreadable at times (bright yellow highlight on white text) in iOS Mail with dark mode.

Note the highlighting displayed in the body of an email. Perhaps iOS developers should allow selection of color palette for dark mode, or otherwise change default colors to enable better legibility in dark mode.
