For some reason I have lost iTunes in applications, how do I get it back.

What macOS version are you running?
If running 10.15 Catalina or 11.0 Big Sur now, there is no longer an iTunes Application.
It has been split into Music, TV, and Finder for its different functions.
If you are actually running High Sierra, you can use Spotlight search to find it.
