Your old iPad will remain fully functional and unchanged. QuickStart and other transfer processes are perhaps confusingly misnamed. Nothing is “transferred” at all - but is merely copied from the old to the new device.


These support pages should get you started with setup of your new iPad - and the various methods by which you can “transfer” your data from old to new iPad:

Use Quick Start to transfer data to a new iPhone, iPad or iPod touch – Apple Support

Apps themselves are not directly transferred by way of the backup, but are easily downloaded again from the App Store to your replacement iPad. Purchased Apps are permanently tied to your AppleID - and are available for installation on compatible devices that are signed-in to the App Store with your AppleID.
