Regardless of whether you had a Time Machine backup prior to upgrading to Big Sur, you should stay where you are and check if the vendors of those applications that do not work, have issued updates that are compatible with Big Sur.
If there are no updates for those applications above, and If you do have a Time Machine backup, you can boot into Recovery mode and select Restore from Time Machine backup. That will wipe Big Sur, and then repave the drive with the operating system, your home directory, and configuration settings as they were for the operating system on that Time Machine backup. Neither Sierra nor High Sierra are now supported by Apple, and not receiving Security or browser updates.
