I would like to add my music to my iPhone from my Mac. Currently I use iTunes Match, but would like to discontinue that. How do I load music to my phone, Will I lose what is in the cloud?

You need to download all music content that is stored in the cloud before you allow your subscription to lapse. Once all your content is stored in your local library you can turn off Sync Library on the device then see Sync your iPhone, iPad, or iPod using your computer - Apple Support.
