If I delete an app off my phone, will that cancel the subscription and not be charged again?

I am being charged for particular apps. If I delete that app off my phone, will that cancel the app and I no longer will be charged?

No. App deletion does not cancel the subscription. Follow the steps in the support document you posted from to actually cancel the subscription.

no, deleting an app does not cancel the subscription
