If I “quit” an app, like Outlook, will I still get notifications on my Mac? I know closing with the red X still keeps the app open and I’ll get notifications. If I actually quit the app though, like Outlook or Messages, Discord, etc. will I still get my notifications?

Thanks. I tested and discovered that - no, if the app is 'quit' you will not receive notifications.
Many apps are composed of more than one actual executable. The "app" that you double-click to run is sometimes just one front-end to the back-end component that is always running. That back end can post notifications at any time. Furthermore, apps can also schedule notifications to be posted at some later time.
Test the notification setup or ask the developer of the software about this as there is no database of apps supporting notifications the one way or the other.
It depends on whether the app was designed to do that.
