My partner has a Macbook Pro 2020 which I think uses 61W USB‑C Power Adapter. I am considering buying Macbook Air 2020, which I can see says to use a different "30W USB‑C Power Adapter".
Could a single power adapter be used for both these devices ? Is there a one size fits all when it comes to Apple power adapters for the latest macbooks ?

There is no one size fits all charger because the input capacity of the MacBooks (Air and Pro) ranges widely. The good thing is that the lower capacity MacBook Air (29W I believe it is) can use the higher capacity MacBook Pro's charger when connected to the Thunderbolt (USB-C) charging port. Your MacBook Air will regulate the power that it draws from the charger to charge its battery. The MacBook Air's charger will not work on your MacBook Pro because it just doesn't have enough power to keep the MacBook Pro charged.
In short, the answer to your question is a YES.
