When it comes to messaging - I know that you can send a message using either
your e-mail
your phone #
How can I control what the recipient sees as to the origin of the message that I send? If, for example, I want the recipient to see that my message identifies me by my e-mail address, where can I make that possible?

Thanks for using Apple Support Communities. It sounds like you have some questions about choosing what contact information is used for Messages and FaceTime. You can choose to use your Apple ID, add additional email addresses you can receive iMessages from, and add your phone number. See how to select them here: Add or remove your phone number in Messages or FaceTime.
This cannot be changed on a person by person basis. You can selectively share your name and photo when starting or responding to messages. Learn more about that here: Share your name and photo in Messages on Mac.
