iwatch unlocking and unpairing

Hi, my son has an apple watch series 2 and needs to unpair it from an icloud account that he cannot access and an Iphone 8 plus which does not power on. We have recently bought him he a new apple watch series 6 and iphone 12 and want to gift the iwatch series 2 to his dad but it has locked and for obvious reasons we cannot unlock it.
