I have empty spaces for apps on my new iphone after transferring the data from my old iphone.
Is there a quick way to make everything move over and fill the empty space? I have lots of apps, to do it individually would be a bummer. Thanks so much!

Actually, it creates a large gap again when I try to add a widget. Any suggestions there?
Do you have actual gaps on your screen where app icons should be there? If YES then I have not seen or heard of this issue however I am interested in how you progress fixing it.
Try the following and see if that resolves it-
Open Settings ➔ General ➔ Reset ➔ Reset Home Screen Layout.
