There is no retention time settings in the Mail app. You will need to delete them:

1. Go to the Sent folder for a specific email account
2. Tap Edit (top right of the screen)
3. Select the emails you need to delete
4. Tap Trash (to bottom of the screen)

If you are trying to save some storage by deleting the sent emails, now that they are moved to the Trash folder, you'll have to repeat the same above steps in the Trash folder.

Whilst iPOS/iPadOS does provide a “retention time” for mail account inboxes, for IMAP/POP3 accounts, mail messages moved to trash/bin do have a configurable setting. For each account:

Settings > Mail > Accounts > [Email Account] > [Account] > Advanced > [Deleted Messages] Remove >

Select from:

• Never
• After one day
• After one week
• After one month
