While you cannot edit it, you can create an alias to use instead: https://support.apple.com/guide/icloud/use-email-aliases-mm6b1a490a/icloud
If you want to delete it that means everything linked to it, emails, storage, photos, etc are all permanently deleted as well. https://support.apple.com/en-us/HT208501
