Plus special instructions if you want to change your Apple ID to an @icloud.com address. You may also wish to turn off "Find My" before changing information and turn it on again afterward.

- This is particularly important to do if you use the "Find My" feature. Disable Find My before changing your information, change the information, then reactivate it with the new information.

What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support

"Sign out of iCloud and the iTunes & App Store.

If you're using iOS 10.3 or later, tap Settings > [your name]. Scroll down and tap Sign Out. Enter your Apple ID password and tap Turn Off.

If you're using iOS 10.2 or earlier, tap Settings > iCloud > Sign Out. Tap Sign Out again, then tap Delete from My [device] and enter your Apple ID password. Then go to Settings > iTunes & App Store > Apple ID > Sign Out."

That helped a good deal. I was able to sign out of the iTunes and App stores in Settings and change to my new address. This allowed me to both avoid the annoying sign in requests (once I put in the current ID and password) but it also seems to have enabled current access to my books. My contacts synched, which seems to indicate that my iCloud account is also working.

One problem (?) is that my iCloud account in Settings still bears the old email under my name. But when I click on my account "Contact Information", the new address appears correctly.
