Sorry in advance if this is a dumb question. I bought a new ipad this week and successfully created all from the backup of my old ipad. My question is, if I delete apps or data from my old ipad, will it also disappear from my new one (given it’s the same id)? I don’t need them to be in synch, just that the old 16 gb ipad needs some space.
Typically, only data would sync via iCloud, for apps that use iCloud and share the same Apple ID. Deleting apps from one iPad should not affect those installed on another.

You can erase and restore the old one to factory settings to sell it or give it away.
