How can I connect Epson Printer L360 to Mac Air M1?

Is there a way that I can connect my Mac Air M1 2020 to an older Epson L360 pinter?

What to Try:

A. The Adapter:

It might work - but your best bet, if incompatible with the macOS, is to perform this off of a Virtual Machine. Something from the 90s would require Windows 3.1 or so. So, try this using a Virtual Machine, connecting is through Ethernet.  Use this Adapter: The Belkin USB-C to Gigabit Ethernet Adapter - Apple


B. Run this Through a Virtual Machine:

If there ends up being not solution for Mac, consider using a Virtual Machine (VM) for this printer (Windows-in-a-window). You would open items in it, and print right off of that. C. Have the Drivers?:

Get the drivers from none other than the manufacturer. Getting the drivers elsewhere may result in malware or spyware being installed.
