Can I choose my apple one subscription apps?
Really, I guess this is a Support question but...
I like the bundle service of Apple One but I want to be able to choose my apps that I use. Will this ever be an option?

We are users like you and have no idea what Apple plans until they tell everybody in the world.
Currently it seems you can only choose options by choosing a plan. Click here --> https://support.apple.com/HT211659 for a list of plans and included features
