Will Contacts be deleted when I quit a exchange activesync

Generally, they will be deleted. There are apps that may, depending on how your Exchange account is configured, allow you to move contacts to your iCloud account. Here's one I found:

That depends on whether the contacts are stored in Exchange, or elsewhere. If they are stored in Exchange, that will depend on your company's IT policies. If they are stored elsewhere, then they should remain.
