I want Siri to stop saying Uh-Huh and Um-Hmm when I say, “Hey Siri.”

Best way is not to leave a gap between waking the beast and saying something.
Open Siri by pressing and holding the Home button. Say "From now on, call me John Doe." Siri will confirm the new name for you. This will change the "nickname" entry on your personal contact. Then simply say; Hey Siri!
With an 11 or newer, just say "Hey Siri", and when the genie pops out of the bottle, say "from now on, call me........"
As far as I was aware, Siri was not so rude as to say UhHuh on Home Button phones.
Some confirmation from iphone 8 and SE2020 users might be useful.
When I call for Sir and say from now on, call me Kris, Siri does confirm the new name. I agree. Then when I say "Hey Siri", Siri give the usual un-huh.

Get over it, it's a machine, it's incapable of insulting anyone. Don't take so long to speak and you will not get the response.
