My Apple I watch indicated that I update at night when watch is (off?/ not in use) Can I update other times by simply turning OFF? Concerned about the recent security announcement and want to do Now. thank you for your advice.

No, you have to "Leave your Apple Watch on its charger while the update completes. Don't restart your Apple Watch, and don't quit the Watch app. When the update completes, your Apple Watch restarts on its own."
