By itself my MacBook Pro started writing in I think Chinese when I type anything on key board.
I went into system preferences and the only language there is English.
I clicked on it. It turned blue. Tried again and still types in another language.
I logged out and shut down computer. It automatically updated last night.
I just tried again and still in another language.
HELP!!! What do I do?

Sounds like you may have the wrong keyboard active and may have also looked at the wrong preferences.
Go to system preferences > keyboard > input sources and make sure there is only ONE item on the list, and that the name of that item is "US".
Post a screenshot of what you are seeing as well.

Did that same thing but I did fix it. On safari Home Screen where it shows the WiFi bars and speaker etc. there was I wired icon I hadn’t seen before. I clicked it and it gave me the option to use English us.

Good news! If it goes back to typing the wrong thing, let us know and post a screen shot of what you have on your Input Sources list.
Go to system preferences > keyboard > input sources and make sure there is only ONE item on the list, and that the name of that item is "US".
It's highly recommended that you update to macOS Big Sur, if you can. That might fix the bug.
If you really don't want to, then I guess you could try reinstalling macOS.
In what application are you seeing the Chinese?
So far I only tried Safari.
I just updated to Big Sur and tried again. Same thing. Chinese.
