Screen Mirroring for Video but BT headset for audio/mic.
How can I mirror or my iPad screen to the TV but have sound and microphone go to a separate headset. Need this for FT and Zoom training classes to prevent echo.

As described, this should be possible. When a EarBuds (or other headset with microphone) are connected, audio should be derived from the connected audio components in preference to the internal speakers and microphone. This functionality is independent of screen mirroring.
