The number and service are not part of the data that is transferred.

to to transfer your number, you either move the SIM card from old phone to the new one, request a new its card from your carrier, and setup cell service directly on the new iPhone if your carrier iOS one of the supported ones there.

Did you activate your new phone with your phone carrier.

Did you use the sim from the old device in the new one?
