Can we trade iPhone 8max of any condition with iPhone 12 Pro Max?

The support article that gntlmnking provided you pretty much covers Apple's Trade-in process. You should be able to either trade-in your existing phone for some value based on its condition. Worst-case, if after being evaluated, it does not provide you with any value, you will have the option to have the phone returned to you or have Apple properly recycle it on your behalf.
