You cannot do AirPlay / Screen Mirroring between an iPhone, iPad and a Mac. In other words, there is no screen mirroring between devices that iOS, iPadOS and a macOS. You can, however, screen mirror / AIrPlay to an AppleTV Device or a Television capable of AirPlay.
