What is this “security” update fixing?

What security issue is this update supposedly fixing? Also, why won’t they disclose this to us?

You would need to share what update you are referring to. There has not been a release in a while. Also, the release notes provide a link with information about security updates. Also release notes are available if you go to Apple - Support - Downloads then click on the iOS update you are referring to.
