Updating OS on Older MacBook Pro

I have a MacBook Pro (13-inch, Mid 2012) currently running High Sierra (10.13.6). What is the most recent version of macOS I can upgrade to? It appears that the 2012 models are not supported by Big Sur.

Back up your data, check your applications for compatibility, and click on Catalina.

how do i install the latest version of macos? How do I upgrade to MacOS Big Sur. I have a MacBook Pro (Retina, 13-inch, Early 2015) and I'm currently running OS X El Capitan Version 10.11.6. Whenever I go in the app store and check for updates, it says I'm already up to date with a software update.
