I have the iwatch 6 and am trying to install the most recent update. My watch is fully charged and is on the charger. WiFi is on for both my iPhone and watch. The update starts but never installs. Any ideas on how to rectify the issue.

You did do everything as it should be... just make sure you’re close to the Apple Watch.
Update from the watch itself.
Place the watch on the charger.
Make sure that your watch is connected to wifi.
On your watch, open the Settings app.
Tap General > Software Update.
Tap Install if a software update is available, then follow the onscreen instructions.
