Why can’t I find airplay 2 app for my iPad Pro 2020?

There is no AirPlay 2 app. AirPlay can be used from within apps that play videos. The icon that you tap to invoke AirPlay is the one with the blue arrow pointing to it.

Because it’s a service built into iOS and not an app.
