How can I detect if my iPhone (iphone8 IOS 14.4.1) has been “jailbroken”? Can that be done covertly? If jailbroken, how do I recover the iOS without losing all of my data, contacts, etc?

If you didn't do it yourself another person would need control of your device for more than 30 minutes.
