How to revert back to a previous version of macOS?

How do I get rid of Big Sur to revert back to a previous version of ios? I absolutely dispise Big Sur and what it has done to my system. My printer is no longer compatable, iphotos can't be used, I've lost a microsoft office package that costs 100's...

A Try Clean Install involves creating a USB Bootable Installer - in this case Big Sur. And, for sure it will be the last offered to the Public - so versions 11.3.1. The USB Installer Must be created on an Apple Computer that Qualifies for Big Sur. Once that is done, the process is straight forwards. Important matter here - ALL DATA on the target computer is removed and lost Forever. There is not " do overs ". Also, if the target computer has the T2 Chip for Touch ID - another step MUST be done to prepare this computer to be able to boot from and External Drive. Again one that is done:

1 - Shutdown the computer and disconnect all external Drives ( If Laptop - connect to charger )

2 - Connect the USB Installer and Restart the computer while holding the OPTION key

3 - This should present the Boot Manager with choices - choose USB Installer of Big Sur

4 - Several Option are presented and Choose Disk Utilities

5 - in Disk Utilities >> View >> View ALL attached Drives

6 - On Left side look for the Upper Most Drive ( Not volumes listed Below ) usually called Apple Media or Apple SSD

7 - That is the Drive to be Erased and Formatted as APFS and GUID Partition Map.

8 - That is done backup out of Disk Utilities

9 - Choose Install macOS and follow the prompts

10 - Computer will Automatically reboot several time

11 - if successful, the final reboot will present the Setup Assist of Big Sur

Dumb question...what is the best way to do a clean install? I found some websites but wasn't sure what the best way it was to wipe out the hard drive and then restore the OS (hoping to do it without using a USB drive since they are slow and unreliable....) I was going to try with 11.3 just to see if it works better with a clean install (then restore the data from Time Machine) and if it is still slow then I wanted to try to bring back 11.2.3.2(?)

Thank you so much for the step by step instructions! this will help me a lot! One question...I tried to do this today, but I have a Fusion drive so I wasn't sure on step 6 which one to choose. On my computer it said "Macintosh HD.." then it said "Macintosh HD - Data" below it. Should I choose "Macintosh HD" to erase? Above that it says "Container disk2" and above that it says "Fusion Drive" but I assume I wouldn't want to erase those two.

Have never ever worked with a Fusion Drive in this process I have outlined earlier. Not comfortable answering the question as it relates to Fusion Drive. If not done correctly from the start could be a Major Undertaking to put Right.

Perhaps the More Expert Contributor @dailabain, who posted earlier on this thread, might pick-up the gauntlet at this point and provide more details on Fusion Drive formatting and re-making the Fusion Drive a Fusion Drive again..
