Is it possible to update my operating system High Sierra IOS to Big Sur IOS on a 2011 Imac 27"? if so what is the easiest way to do so.

You cannot upgrade to macOS Catalina no matter what you do. You need to stay on macOS High Sierra.
Also, you cannot upgrade any component other than the RAM. Upgrading anything else is considered non user-upgradeable and either can't be done or shouldn't be done.

First, Macs run macOS, not iOS.
Secondly, no, you cannot upgrade higher than High Sierra. Your Mac is no longer supported.
