MacMail incoming sorting?

I've recently upgraded my OS to Big Sur on my desktop mac and it looks like the option to organize your incoming mail by date, sender, etc. is no longer available?? I've used that option so many times to find something or organize... why would they take it out? Or am I just being a space cadet?? TIA!!

I tried the "Sort" option in "View" but it won't allow to extract mail from one particular contact as was the case for years with all previous OS-X versions. I WISH I COULD REVERT to the previous CATALINA version. I know it's possible - but way too convoluted and unsafe. Why will Apple not just re-install the old and proven Sort function?!? It's still working on iOS. Very strange and WHY??

Care to elaborate? You can easily extract mail from a certain contact, either by searching, or by creating a Smart Mailbox - just as you could do in Catalina, and before. AFAICT no functionality was lost.
