In my settings my name and Apple ID is greyed out

This is most likely due to content restriction through screentime. Follow these steps:

• go to settings>screentime>content & privacy restrictions
• Scroll down to "account changes"
• Make sure account changes is set to allow

If your device screentime is managed by a parent or guardian, you'll have to ask them to do this.
