I have a 2020 MacBook Pro High Sierra Disk Image, I want to restore it on a 2021 MacBook Air M1, would this be possible? Are there any issues I might potentially face?

Not possible. The Machine Language of High Sierra would not be understood on the New MBA M1. That and one can not install and version of macOS older that what is Originally came installed with. MBA 2021 should have come with Big Sur - no going back to anything earlier.
