2 iPhones?

Hi, I'm hoping someone can help answer a couple of questions I have. After I transfer all info from my older iPhone 7Plus to my new iPhone 11, can I still use my 7 for my movies and books already downloaded into my 7? I'm asking if the older phone can be used just for watching and reading what's downloaded and in the phone - without using the phone/messages/or email part? Can I still connect to the wi-fi in my home if I want to use Air Drop for photos to my Desk Top or use internet? Do I have to take the card out of the 7 so my new 11 works correctly with my phone carrier? Not sure if I'm explaining clearly, or if this is possible. I live in Florida so an extra entertainment source during power outages would be handy. Thanks to anyone that can help, or even understand what I'm asking, I'm easily confused by Tech.
