I would not get anything prior to the 2015 MBP.. The 2015 was a solid machine and quite capable of running the latest macOS Big Sur.

I would not get any from 2016-early 2019

New, only the Mac Mini fits in under $800. It starts at $699. But you'll need to add a monitor, keyboard and mouse.

Used or refurbished you may find other options. As I said a Refurbished 2015 MacBook Air from MacSales.com currently costs $639. And yes it will work for video editing. Just not 4K video editing.

There's also a $799 2015 iMac 4K which will work for video editing fine, even up to 4K video.

Outside of that, you'll be hard pressed to find anything else recent enough to support video editing for under $800.

I would not buy an 12 year old Mac Pro at this point. Even though it can take some hardware upgrades, the most you can get with it will be macOS 10.11 El Capitan.

It's 5 versions down from current, and no longer supported by Apple.

For your budget, you'll be hard pressed to find a sufficiently recent MacBook Pro on Apple's refurbished website or most other recommended websites. I'd say look for a MacBook Air, or a Mac mini if you don't need it to be a laptop.

MacSales is a good trustworthy source of refurbished Macs.

It has a 2015 model for under your budget, and it can still update to macOS 11 Big Sur, the current version.

If you do not have to have a MacBook I think the new M1 Mac mini would be the way to go. You would be using Big Sur as your operating system. This will give you an almost guaranteed 5 year support life, probably longer. Downside is you have to buy a monitor, keyboard, mouse also.

I'm sure that there are a lot of people with far more knowledge than me but I've owned Macs since 1988 and can help you find the answers to questions you may have.

For 1080p editing a MacBook Air will work fine. You will want at least 8GB of RAM and likely a fast external drive to store all the videos.

Also note that a Mac Pro, and MacBook Pro are 2 very different things. The Mac Pro that can take upgrades is a very large desktop tower computer not a laptop.

The second one would work yes and is better overall. More RAM, more storage and is newer.

The first one, will not run macOS 11 Big Sur and does not have enough RAM for good smooth video editing.
