Is it ok to leave MacBook Pro M1 plugged into charger while using. Mac is fully charged, just leaving it plugged in while using at office but not out and about.

Yes, it is okay to leave it plugged in. The software and hardware in the MacBook are designed to optimize the charging procedure for the battery. It will wait to charge the battery to full charge once it learns a pattern to know when you're going to use it on battery and then will charge it up and get it ready for you. If you leave it plugged in, it will continue to monitor the battery and keep it ready for you at a time that you are ready to take it off the charger and optimize the charging to avoid damaging the battery. In short, you aren't going to overcharge the battery and it is okay to leave it plugged in when you're at a power outlet.
