I'd like to make sure I understand the trade-in process correctly. If I send my old ipad to Apple for trade-in and I buy a new one with full payment, will the trade-in value just be credit to my purchase method?

If you arrange the trade at the same time as you are doing the online purchase of a new device, they ship you a return box shortly after your new device ships. After you send in the trade and it is received and evaluated, they then credit the payment method that you used for the new device.
