I bought a new apple watch and I will be trading in my old watch. How can I transfer all the data from the old watch to the new one?

that's very helpful fieryjack. Is this a way of backing up the watch as well? i.e. unpair and then re-pair?
When you unpair your old watch a backup is made and saved in icloud and when you pair your new watch you restore the new watch from this backup.
