I have iPhone 6plus and with iOS 12.5.2. System tells me it’s up to date but several apps like Chase asked for iOS 13 or higher. How could I bypass and manually update to newer iOS and how?

My iPhone 6plus has the latest available iOS per system on 12.5.2. A few apps like Chase and it seems Capital one is requiring 13 and higher iOS. I have an iPad that is already on 14 or higher. Could I manually upgrade my iPhone to higher iOS and how ?
