I'm using MacBook Pro 13 2020. and I'm having difficulties to backup my data from iPhone.

Apple split it up in Catalina. Backups are now performed from the Finder; if you encounter a specific issue, describe it in this thread.

I have the same issues I was backing up 3 phones to my mac now they are going to iCloud which I do not want.
