I have the same model...
I have installed Big Sur as a VM, using VMware Fusion. I plan to wait till refurbished Apple Silicon is available and then play with Big Sur on the Apple Silicon. There are too many issues with Big Sur EFI on Intel Macs.

Yes. This is my second mini 2018, which acts as my 'Data Center'. It has a 2Tb SSD. I run CentOS 7.x, Big Sur 11.x, W8.1 64-bit, W10 64-bit.
I do not recommend Big Sur, especially if you have an older Mac.
Do you consider a mac mini 2018 purchased in 2020 be an older Mac ?
It was a day no working, but you convinced me I should stay on Catalina :)
