How can I see who I have shared my notes or reminders with
iPhone 11 Pro Max, iOS 14
Ok is there any way to hide someone on that list? Like a private setting or secret

Open the Notes app, and open one of the notes you would like to know if is shared.
Look for this in the upper right corner.
Tap the icon and you will see a list of the people the note is shared with.

It's not possible to hide people you share with. The only thing you can do is remove them from the list - but then they can not see the note anymore.
