The easiest way to set up your new Mac is to use the Migration Assistant: Move your content to a new Mac - Apple Support

As @6x6 Very correctly suggested - just do not move Applications from an Intel to New Apple Silicon M1 computer. The Older Applications may not be compatible on Big Sur and especially on the M1 CPU. Better to check the Developer of old computer application for compatible and or updates / upgrade for Big Sur.
Thank you what if I don't want everything to go on to my new computer if I transfer using migration assistant won't everything transfer over to new Mac? I did a back up on a seagate external hard drive is that easier so I can pick the files I want on the new one?
If you do not what to use Migration Assist then do not. Just be sure to read in details from the linked page @ 6x6 supplied.
