Place your finger on the bottom margin of the Watch display and pause briefly, then slide your finger upwards.

This opens control center.

Scroll through the control list and find and tap on the 💧

To turn off the water lock once activated, rotate the digital crown (“knob”) fairly quickly, for maybe five or ten spins.
