How do I search for email in IOSBig Sur?

I just installed Bug Sur on my MacBook air. I can't find a way to search for emails. What do I do"?

I use the example given above (the same way I have done for years) and now it only searches my "inbox" not my subfolders. It used to prior to Big Sir.
