An iPhone 5s cannot reach iOS 14, and will forever be at iOS 12.

There's also presently no path to get to iOS 13 from an earlier iOS version. You'll get iOS 14 on any iPhone that can be upgraded.

As for size? iPhone 6s Plus is the biggest between iPhone 5s and the first-generation iPhone SE.

iPhone 11 Pro Max and iPhone XS Max are the biggest iPhone displays between iPhone 5s and the second-generation iPhone SE.

If you don't specifically need an iPhone here, any recent iPad is capable of iPadOS 14, and with a larger display. Even iPad Mini.

An iPhone 5S won’t upgrade beyond iOS 12.5.8. To upgrade it to iOS 13, you’ll need an iPhone 7 or later.

iPhone 6S / 6S Plus can also be updated to iOS 14.

Unfortunately, it is also not possible to update to iOS13 on iPhone 6S and 7 anymore.
